Peel the sweet potatoes and slice into uniform 1.3 cm thick rounds. Arrange the rounds in a large bowl.

Toss the sweet potato rounds with olive oil, salt, and black pepper, ensuring each slice is well coated.

Lay the seasoned sweet potato rounds in a single layer on the prepared baking tray. Roast in the preheated oven for 18–22 minutes, flipping halfway through, until tender and golden brown at the edges.

Remove the tray from the oven and sprinkle the roasted sweet potato rounds generously with crumbled feta cheese. Optionally, top with chopped thyme and chopped walnuts or pecans.

Transfer the rounds to a serving platter. Finish with a drizzle of honey and, if desired, a light drizzle of balsamic glaze. Serve warm.
