Honey Feta Sweet Potato Rounds (Print Version)

Roasted sweet potatoes, creamy feta, and honey deliver the perfect blend of sweet and savory in every bite.

# Ingredients:

→ Base

01 - 2 medium sweet potatoes, peeled and sliced into 1.3 cm thick rounds
02 - 2 tablespoons olive oil
03 - 0.5 teaspoon salt
04 - 0.25 teaspoon freshly ground black pepper

→ Toppings

05 - 115 grams feta cheese, crumbled
06 - 2 tablespoons honey
07 - 1 tablespoon fresh thyme leaves, chopped (optional)
08 - 1 tablespoon balsamic glaze (optional, for drizzling)
09 - 25 grams chopped walnuts or pecans (optional, for garnish)

# Steps:

01 - Preheat the oven to 220°C and line a large baking tray with parchment paper.
02 - Peel the sweet potatoes and slice into uniform 1.3 cm thick rounds. Arrange the rounds in a large bowl.
03 - Toss the sweet potato rounds with olive oil, salt, and black pepper, ensuring each slice is well coated.
04 - Lay the seasoned sweet potato rounds in a single layer on the prepared baking tray. Roast in the preheated oven for 18–22 minutes, flipping halfway through, until tender and golden brown at the edges.
05 - Remove the tray from the oven and sprinkle the roasted sweet potato rounds generously with crumbled feta cheese. Optionally, top with chopped thyme and chopped walnuts or pecans.
06 - Transfer the rounds to a serving platter. Finish with a drizzle of honey and, if desired, a light drizzle of balsamic glaze. Serve warm.
