Crisp cucumber spirals dressed in flavorful chili oil, soy, and sesame with a hint of garlic and onion.

# Ingredients You’ll Need:

→ Salad

01 - 5 cucumbers

→ Marinade

02 - 3 teaspoons granulated white sugar
03 - 2 teaspoons sesame seeds
04 - 1 teaspoon crushed garlic
05 - 2 to 3 tablespoons chopped green onion
06 - 1.5 tablespoons soy sauce
07 - 3 teaspoons rice vinegar
08 - 3 teaspoons Chinese chili oil
09 - 1 teaspoon sesame oil

→ To finish

10 - 3 teaspoons salt

# How to Make It:

01 - In a medium bowl, combine granulated white sugar, sesame seeds, crushed garlic, and chopped green onion. Stir in soy sauce, rice vinegar, Chinese chili oil, and sesame oil until fully mixed. Set aside.
02 - Trim both ends of the cucumbers. Place each cucumber between two chopsticks to prevent cutting all the way through. Using a sharp knife, make diagonal cuts along one side, then flip the cucumber and cut perpendicular to the first cuts to achieve a spiral shape. Repeat with all cucumbers.
03 - Transfer the cucumber spirals to a large bowl. Sprinkle with salt and gently massage to ensure even distribution. Let them sit for 8 to 10 minutes.
04 - Rinse the salted cucumbers thoroughly with cold water to remove excess salt. Drain well.
05 - Place the drained cucumber spirals in a serving bowl. Pour the prepared marinade over the cucumbers and toss until evenly coated. Serve immediately or chill before serving.

# Extra Tips:

01 - Make diagonal and perpendicular cuts on the cucumbers to create the spiral shape for better marinade absorption.
02 - Salting and rinsing the cucumbers enhances their crispness and reduces excess saltiness.
03 - For intensified flavour, refrigerate the marinated cucumbers for at least one hour before serving.
