Combine strawberries and ¼ cup pineapple juice in a blender. Blend until smooth and creamy. Transfer the mixture to a clean jug and set aside.

Rinse the blender. Add chopped pineapple, ice cubes, ¾ cup pineapple juice, coconut milk, and brown sugar if desired. Blend until the mixture is completely smooth.

Pour the strawberry base into two tall glasses, filling each about 25%. Gently layer the pineapple-coconut blend over the strawberry base to fill the glasses. Swirl using a straw or skewer to create a gentle gradient effect if desired.
