Warm 60 ml of water until steaming but not boiling.

Gradually sprinkle gelatin powder over hot water while stirring continuously until fully dissolved; mixture may appear foamy.

Add apple cider vinegar or lemon juice along with chosen sweetener. Stir thoroughly to combine.

Pour in the remaining 60 ml of cold water to bring the mixture to room temperature.

Transfer mixture into a glass dish or silicone mold. Refrigerate for a minimum of 2 hours until completely set.

Cut set gelatin into cubes and store in an airtight container in the refrigerator for up to 5 days.
