Vegan Mushroom Sausage Rolls (Print-Friendly Format)

Crispy pastry wrapped around a umami-packed mushroom filling, perfect for sharing at any gathering.

# Ingredients You’ll Need:

→ Filling

01 - 1 white onion, finely chopped
02 - 3–4 garlic cloves, minced
03 - 2 teaspoons olive oil or vegetable broth (for oil-free)
04 - 450 g mixed mushrooms, chopped
05 - 6–8 sprigs fresh thyme, leaves only
06 - 0.25 cup curly parsley, finely chopped
07 - 4–5 tablespoons tamari or soy sauce
08 - 1 cup raw cashews, pulsed into coarse crumbs
09 - 2–3 tablespoons nutritional yeast
10 - Salt and pepper, to taste

→ Pastry & Garnish

11 - 1 vegan puff pastry sheet, halved lengthwise
12 - Plant-based milk or melted vegan butter, for brushing
13 - Sesame seeds or Everything But the Bagel seasoning, for topping
14 - Fresh parsley, chopped, for garnish (optional)

→ Dipping Sauce (Optional)

15 - Vegan honey mustard sauce (maple syrup and Dijon blend)

# How to Make It:

01 - Heat olive oil in a large skillet over medium heat. Sauté chopped onions and minced garlic until softened and lightly golden.
02 - Add chopped mushrooms to the pan. Cook for 5–7 minutes, stirring occasionally, until mushrooms are caramelised and liquid has evaporated. Stir in tamari, thyme leaves, and chopped parsley. Reduce the heat and cook until most of the moisture is gone.
03 - Pulse raw cashew nuts in a food processor until resembling coarse breadcrumbs. Incorporate pulsed cashews and nutritional yeast into the mushroom mixture. Combine thoroughly and season with salt and pepper to taste. Remove skillet from heat and allow filling to cool slightly.
04 - Preheat oven to 200°C. Roll out the vegan puff pastry on a floured surface and cut lengthwise to create two long rectangles.
05 - Spoon the mushroom filling along one side of each pastry strip. Lightly moisten the edges. Roll the pastry tightly over the filling, sealing the edges by pressing gently. Slice into preferred portions.
06 - Place sausage rolls seam-side down on a lined baking sheet. Brush tops with plant-based milk or melted vegan butter. Sprinkle with sesame seeds or seasoning of choice.
07 - Bake in the preheated oven for approximately 20 minutes or until pastry is golden and crisp. Serve warm alongside vegan honey mustard dipping sauce if desired.
