Preheat oven to 200°C. Lightly grease a roasting pan with olive oil.

Pat chicken thighs dry and season all over with salt, black pepper, and paprika.

In a small bowl, whisk together orange juice, soy sauce, honey, minced garlic, and olive oil until combined.

Layer orange slices on the base of the roasting pan. Place seasoned chicken thighs on top of the orange slices.

Pour the marinade evenly over the chicken. Sprinkle with fresh thyme leaves.

Roast in the oven for 25 minutes, basting the chicken halfway with pan juices.

Switch oven to broil. Broil chicken for 3 to 5 minutes, or until skin is caramelized and glossy.

Allow chicken to rest for 5 minutes. Garnish with additional orange slices and fresh thyme sprigs.
