# How to Make It:

01 - Preheat oven to 190°C. Boil peeled and cubed sweet potatoes in salted water for approximately 10 minutes or until fork-tender, then drain thoroughly.
02 - In a large skillet, heat olive oil over medium heat. Add diced red onion and red bell pepper; sauté for 5 minutes until softened. Add minced garlic and cook for 1 additional minute.
03 - In a spacious mixing bowl, combine cooked sweet potatoes, black beans, corn, sautéed vegetables, ground cumin, paprika, chili powder, lime juice, salt, and black pepper. Mix until evenly distributed.
04 - Lightly grease a 33 x 23 cm baking dish. Layer half of the sweet potato and bean mixture evenly in the dish, then top with half of the shredded cheese. Repeat with remaining mixture and cheese to create five definitive strata.
05 - Pour vegetable broth around the edges of the layered casserole. Cover the dish tightly with foil.
