Set oven temperature to 180°C (160°C with fan assist).

Place sunflower seeds, salt, and maple syrup in a bowl. Mix thoroughly to evenly coat the seeds.

Line a baking sheet with parchment paper. Press a portion of the mixture into a small round cookie cutter on the sheet, then carefully remove cutter to form flat discs. Alternatively, spoon small mounds onto the sheet for clusters.

Transfer baking sheet to the oven and bake for 15–20 minutes, or until the sunflower seed mixture is golden brown. Adjust time based on the size of portions.

Let bites cool completely on the baking sheet to firm up; handling them while warm may cause breakage.

Melt the dark chocolate. Dip the base of each sunflower seed bite into the chocolate, or drizzle chocolate over the tops as desired. Allow to set before serving.
