# Ingredients You’ll Need:

→ Sushi Rice Layer

01 - 2 cups cooked sushi rice
02 - 1 tablespoon rice vinegar
03 - 0.5 teaspoon sugar
04 - 0.5 teaspoon salt

→ Spicy Salmon Mixture

05 - 340 grams skinless salmon fillet, cooked and flaked
06 - 60 millilitres mayonnaise
07 - 30 millilitres Sriracha sauce
08 - 15 millilitres soy sauce
09 - 5 millilitres sesame oil

→ Toppings and Finishes

10 - 60 grams shredded mozzarella cheese
11 - 2 sheets roasted seaweed (nori), cut into small squares
12 - 2 green onions, thinly sliced
13 - 1 tablespoon toasted sesame seeds

# How to Make It:

01 - Preheat oven to 200°C. Lightly grease an 20x20 centimetre baking dish.
02 - In a bowl, combine cooked sushi rice with rice vinegar, sugar, and salt. Mix until evenly seasoned, then press mixture firmly and evenly into the base of the prepared baking dish.
03 - In a separate bowl, blend flaked salmon with mayonnaise, Sriracha sauce, soy sauce, and sesame oil until well combined.
04 - Distribute spicy salmon mixture evenly over the rice base. Top with shredded mozzarella cheese.
05 - Bake for 18 to 20 minutes, or until the cheese is melted, golden, and bubbling. Remove from oven and allow to cool for a few minutes.
06 - Scatter green onions and toasted sesame seeds over the top. Serve warm with nori squares for scooping.

01 - For easier serving, let the dish cool slightly before cutting into portions; the rice will hold together better.
