In a bowl, combine cooked sushi rice with rice vinegar, sugar, and salt. Mix until evenly seasoned, then press mixture firmly and evenly into the base of the prepared baking dish.

In a separate bowl, blend flaked salmon with mayonnaise, Sriracha sauce, soy sauce, and sesame oil until well combined.

Distribute spicy salmon mixture evenly over the rice base. Top with shredded mozzarella cheese.

Bake for 18 to 20 minutes, or until the cheese is melted, golden, and bubbling. Remove from oven and allow to cool for a few minutes.

Scatter green onions and toasted sesame seeds over the top. Serve warm with nori squares for scooping.
