Combine sourdough discard, all-purpose flour, granulated sugar, salt, baking powder, melted butter or coconut oil, and warm milk in a large bowl. Mix until a soft dough forms. Knead gently on a floured surface for 2 to 3 minutes. Cover and let the dough rest for 30 minutes.

Roll the rested dough into a rectangle approximately 1 cm thick. Evenly spread softened butter over the surface. Sprinkle brown sugar, ground cinnamon, and vanilla extract over the buttered dough.

Starting from the longer side, roll the dough into a tight log. Slice the log into pieces approximately 2.5 cm thick.

Arrange the pieces on a lined baking tray. Bake in a preheated oven at 190°C for 18 to 20 minutes, or air fry at 175°C for 10 to 12 minutes, until golden and cooked through.

Whisk softened cream cheese, powdered sugar, milk, and vanilla extract together until smooth. Drizzle over warm bites before serving.
