Place rolled oats, non-dairy milk, yogurt (if using), pumpkin purée, maple syrup, chia seeds, vanilla extract, pumpkin spice, cinnamon (if preferred), and salt into a clean jar or airtight container.

Stir all ingredients together until evenly combined, then seal the jar securely with a lid.

Store the sealed jar in the refrigerator overnight or for a minimum of 4 hours to allow the oats to soften and flavors to meld.

Before eating, open the jar and stir the oats well. Add a splash of milk if a thinner consistency is desired.

Enjoy directly from the jar or transfer to a bowl. Top with your preferred garnishes such as chopped pecans, whipped cream, yogurt, or granola.
