18g Protein Tofu Burritos Wow (Print-Friendly Format)

Tasty tofu burritos offer 18g protein, bold flavor, veggies, and quick prep for a satisfying, hearty vegetarian meal.

# Ingredients You’ll Need:

→ Main Filling

01 - 1 block (approximately 400g) firm tofu, drained and crumbled
02 - 1 tablespoon olive oil
03 - 1 small onion, diced
04 - 1 bell pepper, diced
05 - 2 cloves garlic, minced
06 - 1 teaspoon ground cumin
07 - 1 teaspoon chili powder
08 - 0.5 teaspoon paprika
09 - Salt and freshly ground black pepper to taste

→ Assembly

10 - 4 large wheat flour tortillas
11 - 250g cooked rice
12 - 120g black beans, drained and rinsed
13 - 120ml salsa
14 - 15g fresh cilantro, chopped
15 - 1 avocado, sliced

# How to Make It:

01 - Heat olive oil in a large frying pan over medium heat. Add the diced onion and bell pepper, and cook for 3 minutes until softened.
02 - Add minced garlic, cumin, chili powder, paprika, salt, and pepper to the pan. Stir continuously for 1 minute until fragrant. Incorporate the crumbled tofu and cook for a further 5 minutes, stirring occasionally, until heated through and lightly golden.
03 - Individually warm each tortilla in a dry pan for approximately 20 seconds per side or microwave for 15 seconds until pliable.
04 - Spoon a portion of rice onto the centre of each tortilla. Evenly divide the tofu mixture, black beans, salsa, cilantro, and sliced avocado among the tortillas.
05 - Fold in the sides, then roll each burrito tightly from the bottom up. Serve immediately while warm.

01 - For best texture, choose extra-firm tofu and press out excess moisture before cooking.
02 - Add your favourite hot sauce for extra heat, or wrap burritos in foil for a portable meal.
