Preheat the oven to 175°C. Line a rimmed baking sheet with parchment paper.

In a large bowl, combine granulated sugar, corn syrup, melted butter, vanilla extract, and egg. Reserve 2 tablespoons of this mixture for topping.

Fold chopped pecans into the remaining sugar mixture until thoroughly coated.

Unroll crescent dough and separate into triangles on the prepared tray. Place 2 to 3 tablespoons of pecan filling on the wide end of each triangle, then roll up toward the pointed end.

Bake in preheated oven for 8 minutes or until crescent rolls are starting to set.

Remove rolls from oven and brush with reserved sugar mixture. Bake for an additional 5 minutes until golden brown.

Remove from oven and garnish with additional chopped pecans if desired. Serve warm.
