Preheat oven to 175°C. Line a large baking sheet with aluminum foil.

Place a single layer of graham crackers onto the lined baking sheet, fitting 14 crackers if using a 43 x 28 cm sheet.

Combine butter, brown sugar, and sea salt in a medium saucepan. Melt over low heat, stirring and scraping the bottom and sides regularly.

Increase heat and bring the mixture to a boil, allowing it to boil for 2 minutes. Remove from heat and immediately stir in the vanilla extract and chopped pecans.

Pour the pecan mixture evenly over the graham crackers, spreading it with a silicone spatula.

Transfer the baking sheet to the oven and bake for 10 minutes.

Remove from oven and let cool completely for 1 to 2 hours, then break into pieces.
