Peel, core, and dice ripe pears into uniform pieces to ensure even cooking.

In a medium saucepan, mix pears, sugar, vanilla bean seeds or extract, lemon juice, cinnamon, and water.

Simmer over medium-low heat for 30 to 40 minutes, stirring occasionally, until pears are completely tender.

Remove the vanilla bean pod if used. Use an immersion blender to puree the mixture until exceptionally smooth.

Return the mixture to low heat. Cook for an additional 20 to 30 minutes, stirring frequently, until thickened to a butter-like consistency.

Let cool slightly. Transfer to sterilised jars and store refrigerated or freeze for longer preservation.
