Pear Gorgonzola Stuffed Chicken (Print Version)

Juicy chicken filled with pear, Gorgonzola, spinach, and garlic, baked and finished with a touch of balsamic.

# Ingredients:

→ For the stuffed chicken

01 - 4 boneless, skinless chicken breasts
02 - 2 ripe yet firm pears, diced
03 - 115 grams Gorgonzola cheese, crumbled
04 - 2 cups fresh spinach, chopped
05 - 3 cloves garlic, minced
06 - 2 tablespoons extra virgin olive oil
07 - Salt, to taste
08 - Black pepper, to taste
09 - Balsamic vinegar, for drizzling (optional)

# Steps:

01 - Preheat oven to 190°C. In a bowl, combine diced pears, crumbled Gorgonzola cheese, chopped spinach, minced garlic, salt, and black pepper.
02 - Using a sharp knife, cut a pocket into each chicken breast without slicing all the way through. Spoon the pear and cheese mixture evenly into each pocket.
03 - Heat extra virgin olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 4–5 minutes per side until lightly golden.
04 - Transfer the skillet with seared chicken breasts to the preheated oven. Bake for 20–25 minutes or until the internal temperature reaches 75°C.
05 - Allow stuffed chicken breasts to rest for several minutes before serving. Optionally, drizzle with balsamic vinegar.

# Notes:

01 - To prevent overstuffing, gently secure pockets with toothpicks if necessary. For an extra touch, use ripe pears that are still firm to maintain texture during baking.
