Fresh peach, honey, Dijon, and balsamic combine for a vibrant, smooth vinaigrette ideal for salads or drizzling.

# Ingredients:

01 - 1 ripe peach, peeled and diced, or 120 ml peach purée
02 - 30 ml honey
03 - 15 ml Dijon mustard
04 - 60 ml balsamic vinegar
05 - 120 ml olive oil
06 - 2.5 ml salt
07 - 1.25 ml ground black pepper
08 - 2.5 ml garlic powder (optional)
09 - 2.5 ml dried thyme or 5 ml fresh thyme (optional)

# Steps:

01 - Combine peach, honey, Dijon mustard, balsamic vinegar, salt, black pepper, and garlic powder, if using, in a blender. Process until smooth.
02 - With the blender on low speed, gradually incorporate olive oil to achieve a creamy, unified dressing.
03 - Taste and adjust the seasoning. Enhance sweetness with additional honey, or increase acidity with more balsamic vinegar as desired.
04 - Serve immediately or transfer to an airtight container and refrigerate for up to one week.

01 - For a vegan version, substitute honey with maple syrup.
02 - Opt for white balsamic vinegar for a lighter flavor profile.
