# Ingredients You’ll Need:

01 - 70 grams white granulated sugar
02 - 70 grams tightly packed brown sugar
03 - 0.25 teaspoon salt
04 - Zest from 1 orange
05 - 1 egg white
06 - 8 millilitres fresh orange juice
07 - 280 grams raw almonds

# How to Make It:

01 - Preheat oven to 120°C. Line a baking sheet generously with aluminium foil or parchment paper.
02 - In a medium bowl, mix together white granulated sugar, brown sugar, salt, and orange zest until well incorporated. Set aside.
03 - In a large bowl, whisk the egg white until frothy, about 1 minute. Whisk in the fresh orange juice, then add raw almonds and toss to coat evenly.
04 - Pour the sugar mixture over the almonds and stir until nuts are fully coated.
05 - Spread the coated almonds in a single layer onto the prepared baking sheet. Bake for 60 minutes, stirring every 20 minutes.
06 - Remove from oven and allow almonds to cool completely on the tray before serving or storing.

01 - Foil is recommended for easier clean-up, as the sugars can adhere to parchment and silicone mats.
02 - For larger batches, bake in single layers, leaving space between almonds to avoid clumping and steaming.
