Preheat oven to 120°C. Line a baking sheet generously with aluminium foil or parchment paper.

In a medium bowl, mix together white granulated sugar, brown sugar, salt, and orange zest until well incorporated. Set aside.

In a large bowl, whisk the egg white until frothy, about 1 minute. Whisk in the fresh orange juice, then add raw almonds and toss to coat evenly.

Pour the sugar mixture over the almonds and stir until nuts are fully coated.

Spread the coated almonds in a single layer onto the prepared baking sheet. Bake for 60 minutes, stirring every 20 minutes.

Remove from oven and allow almonds to cool completely on the tray before serving or storing.
