Combine skim milk, unsweetened almond milk, pistachio pudding mix, vanilla protein powder, and powdered monk fruit sweetener in the Ninja Creami pint container up to the maximum fill line. Blend thoroughly using a hand-held frother until fully incorporated.

Seal the container and place in the freezer for 24 hours until mixture is completely solid.

Remove the frozen pint from the freezer and run under hot water for 60 seconds. Install securely into the Ninja Creami machine.

Select the 'Lite Ice Cream' setting and process. Remove the lid. If the texture appears powdery, return to the machine and select the 'Respin' function.

Inspect the consistency. For optimal creaminess, add a small additional amount of milk if needed and respin as required until smooth and creamy.

Add raw pistachios to the ice cream and use the 'Mix-In' setting to evenly distribute throughout the base.
