03 - 170 g canned black beans, rinsed and drained
04 - 1 tablespoon (15 ml) green jalapeño or green chili peppers, pickled or fresh, chopped
05 - 90 ml mild salsa
06 - 60 g mozzarella cheese, shredded
07 - 15–30 ml olive oil, for cooking
08 - 50 g red bell pepper, diced

09 - 0.5 teaspoon ground cumin
10 - 0.25 teaspoon red chili flakes
11 - 1 teaspoon dried oregano
12 - Salt, to taste
13 - Freshly ground black pepper, to taste
14 - 1 teaspoon garlic, minced

→ For Serving

15 - Lime wedges
16 - Fresh cilantro, chopped
17 - 170 g uncooked quinoa, optional

# How to Make It:

01 - Start cooking the quinoa according to package instructions if serving as a side.
02 - In a bowl, combine chicken pieces with cumin, red chili flakes, oregano, salt, black pepper, and toss to evenly coat.
03 - Heat half the olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook until nearly cooked through, about 4–6 minutes. Transfer chicken to a plate.
04 - Wipe the skillet with paper towels. Add remaining olive oil, then sauté sweet potatoes, jalapeños, garlic, and red bell pepper. Cook, stirring occasionally, for 5–8 minutes until softened and heated through.
05 - Stir in salsa and black beans. Return the browned chicken to the skillet, mixing well to incorporate all ingredients.
06 - Sprinkle shredded mozzarella evenly over the mixture. Cover the skillet with a lid and heat until the cheese is melted.
07 - Remove from heat. Plate the mixture, garnishing with freshly squeezed lime juice and chopped cilantro. Serve with quinoa if desired.
