# Ingredients:

→ Dressing Base

01 - 6 tablespoons fresh lemon juice (approximately 90 ml, from 3–4 lemons)
02 - 1 tablespoon water (15 ml)
03 - 1 1/2 teaspoons dried oregano (about 3 grams)
04 - 1 garlic clove, peeled and finely minced
05 - 3/4 cup extra virgin olive oil (180 ml)
06 - 1/2 teaspoon salt (about 3 grams)
07 - 1/2 teaspoon freshly ground black pepper (about 1 gram)
08 - 1/4 teaspoon red pepper flakes (about 0.5 gram)

# Steps:

01 - Place lemon juice, water, dried oregano, minced garlic, olive oil, salt, black pepper, and red pepper flakes into a medium mixing bowl.
02 - Whisk vigorously with a wire whisk until the mixture is fully blended and slightly thickened. Alternatively, combine ingredients in a mason jar, seal, and shake until homogeneous. For a smoother texture, use a stick blender in a wide-mouth mason jar to emulsify.
03 - Transfer the dressing to a clean mason jar or airtight container. Refrigerate for up to 5 days. Stir or shake before each use to recombine if separation occurs.

# Notes:

01 - Customize the flavor by adding finely minced shallot, extra garlic, or Dijon mustard for more depth and a creamy texture.
02 - A teaspoon of honey can be incorporated to balance acidity, or an additional tablespoon of water to mellow the tartness.
03 - Blend in grated Parmesan cheese for a savory variation, or substitute lemon juice with white or red wine vinegar if needed.
