In a bowl, mix mascarpone cheese, honey or maple syrup, and vanilla extract until the mixture is smooth and creamy.

With a spoon or piping bag, fill each date cavity with approximately 1 teaspoon of the mascarpone mixture.

Top each stuffed date with chopped nuts and lightly drizzle with maple syrup.
