Combine water and sugar in a saucepan. Heat over medium, stirring frequently, for 3–4 minutes until sugar is fully dissolved.

Remove saucepan from heat. Allow syrup to cool to room temperature before proceeding.

Stir lime juice, lime zest, and light corn syrup (if using) into the cooled syrup until thoroughly integrated.

Pour the mixture into a shallow, freezer-safe container, spreading evenly.

Place container in the freezer. Every 30 minutes, stir vigorously with a fork to break up ice crystals. Repeat for 3–4 hours until a fluffy, granita-like texture is achieved.
