Place the chicken breasts between sheets of parchment and pound them to an even thickness. Season on both sides with salt and black pepper.

In a small bowl, combine honey and freshly squeezed lime juice until well blended.

Heat a skillet over medium-high heat. Cook chicken breasts for 6–7 minutes per side or until golden and fully cooked. In the final minute, brush with the honey lime glaze and allow it to bubble, coating the chicken.

Cook brown rice according to package instructions. Fluff with a fork and season lightly with salt.

Just before assembling, cut the avocados in half, remove the pits, and slice each half into even slices.

Using a ring mold or cookie cutter, layer a portion of rice, then slices of glazed chicken, followed by avocado. Gently press for structure, then remove the ring. Drizzle with extra lime juice before serving.
