Heat 1 tablespoon olive oil in a large skillet over medium heat. Add diced onion and sauté for 3–4 minutes, until softened and fragrant.

Add the lean ground beef to the skillet. Use a spatula to break it apart, cooking for 6–8 minutes. Stir in taco seasoning, salt, and pepper. Continue to cook until beef is well browned and cooked through.

Divide roasted sweet potatoes among serving bowls. Top with ground beef, avocado slices, and a generous scoop of cottage cheese.
