Line a small sheet pan with parchment paper and brush lightly with extra virgin olive oil to prevent sticking.

Place the sesame seeds in a nonstick pan over medium heat. Stir continuously for 3–4 minutes until seeds are golden and emit a nutty aroma.

Transfer the pan back to medium heat and pour in the honey. Stir constantly until the mixture reaches a slight boil and bubbles, maintaining around 120°C for 3–4 minutes.

Gently fold the toasted sesame seeds into the heated honey. Stir continuously for approximately 5 minutes to ensure even coating.

Quickly pour the sesame and honey mixture onto the prepared sheet pan. Spread evenly and flatten using parchment paper or a rolling pin for a uniform layer.

Allow the mixture to cool for 20 minutes, then cut into rectangular bars or squares with a sharp knife.
