Place sweet potato wedges in a large mixing bowl and toss with the seasoned oil mixture until evenly coated.

Sprinkle half of the grated Parmesan cheese over the wedges. Toss again to distribute cheese evenly.

Arrange wedges in a single, non-overlapping layer on the prepared baking sheet to ensure crispness.

Bake in the preheated oven for 25–30 minutes, turning wedges halfway through, until golden brown and crisp at the edges.

While hot, sprinkle the remaining Parmesan cheese over the wedges to allow slight melting.
