Lay a tortilla flat. Arrange 2 slices of provolone cheese over half, top with approximately 85 grams roast beef and a generous handful of French fried onions. Brush the inside edge with olive oil.

Starting at the filled side, roll the tortilla tightly to enclose the fillings. Seal using the oiled edge and place seam-side down on the prepared baking sheet. Repeat with remaining ingredients.

Brush the tops and sides of each roll lightly with remaining olive oil for a crisp, golden finish.

Bake in the preheated oven for 8 to 10 minutes, rotating the baking sheet halfway if needed, until tortillas are golden and cheese starts to bubble.

While roll ups bake, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a saucepan. Heat over medium, whisking to blend, and simmer for 3 to 4 minutes until hot and aromatic.

Transfer baked roll ups to a wire rack and rest for 2 minutes to allow cheese to set. Slice each roll into halves or thirds.
