French Dip Tortilla Roll Ups (Print-Friendly Format)

Roast beef, provolone, and fried onions wrapped in tortillas, baked crisp and paired with savory au jus.

# Ingredients You’ll Need:

→ Roll Ups

01 - 4 large flour tortillas (30 cm diameter)
02 - 8 slices provolone cheese, thinly sliced
03 - 340 grams deli roast beef, freshly sliced
04 - 1 cup (about 60 grams) French fried onions, store-bought or homemade
05 - 2 tablespoons extra virgin olive oil

→ Au Jus Dip

06 - 300 millilitres beef consommé
07 - 240 millilitres water
08 - 1 tablespoon Worcestershire sauce
09 - 2 teaspoons low sodium soy sauce
10 - 1/2 teaspoon onion powder
11 - 1/2 teaspoon garlic powder

# How to Make It:

01 - Preheat oven to 220°C and line a rimmed baking sheet with parchment paper for easy cleanup.
02 - Lay a tortilla flat. Arrange 2 slices of provolone cheese over half, top with approximately 85 grams roast beef and a generous handful of French fried onions. Brush the inside edge with olive oil.
03 - Starting at the filled side, roll the tortilla tightly to enclose the fillings. Seal using the oiled edge and place seam-side down on the prepared baking sheet. Repeat with remaining ingredients.
04 - Brush the tops and sides of each roll lightly with remaining olive oil for a crisp, golden finish.
05 - Bake in the preheated oven for 8 to 10 minutes, rotating the baking sheet halfway if needed, until tortillas are golden and cheese starts to bubble.
06 - While roll ups bake, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a saucepan. Heat over medium, whisking to blend, and simmer for 3 to 4 minutes until hot and aromatic.
07 - Transfer baked roll ups to a wire rack and rest for 2 minutes to allow cheese to set. Slice each roll into halves or thirds.
08 - Arrange sliced roll ups on a serving platter and present immediately with warm au jus for dipping.

# Extra Tips:

01 - Briefly warm the tortillas before assembling to make rolling easier and prevent tearing.
02 - Allow roll ups to rest before slicing for cleaner cuts and intact fillings.
03 - Store leftovers in an airtight container and reheat in the oven to maintain crispness.
04 - Substitute provolone with mozzarella or Swiss cheese if desired.
