Combine non-dairy yogurt, protein powder (if using), cashew butter, vanilla extract, and maple syrup in a small bowl. Stir thoroughly until smooth and uniform.

Fold in mini chocolate chips to distribute evenly throughout the mixture.

Line a baking sheet with parchment paper. Using a medium or large cookie scoop, portion the yogurt mixture into individual dollops, spacing them apart. Place the baking sheet in the freezer and chill for at least 1 hour, until fully solid.

Melt chocolate chips with coconut oil using a microwave or double boiler. Stir until mixture is completely smooth.

Remove frozen yogurt bites from the freezer. Dip each one into the melted chocolate, coating entirely, then place back onto the lined baking sheet.

Return coated bites to the freezer for at least 30 minutes, or until chocolate shell is set. Store in the freezer until ready to serve.
