# Ingredients You’ll Need:

→ Cake Layers

01 - 315 grams all-purpose flour
02 - 2.5 teaspoons baking powder
03 - 0.5 teaspoon salt
04 - 226 grams unsalted butter, softened
05 - 350 grams granulated sugar
06 - 4 large eggs, room temperature
07 - 2 teaspoons vanilla extract
08 - 240 millilitres whole milk or buttermilk

→ Cherry Filling

09 - 300 grams cherries (fresh, frozen, or canned), pitted and chopped
10 - 12–24 grams granulated sugar
11 - Splash of lemon juice (optional)

→ Cherry Cream Cheese Frosting

12 - 226 grams cream cheese, softened
13 - 113 grams unsalted butter, softened
14 - 420 grams powdered sugar
15 - 1 teaspoon vanilla extract
16 - 60 millilitres cherry juice or puréed cherries (optional, for colour and flavour)

# How to Make It:

01 - Preheat oven to 175°C. Grease and line three 20-centimetre round cake pans with parchment paper.
02 - In a medium bowl, whisk together flour, baking powder, and salt.
03 - In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 3–5 minutes.
04 - Beat in eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
05 - Alternately add the flour mixture and milk to the butter mixture, beginning and ending with flour. Mix gently until just combined; do not overmix.
06 - Divide batter evenly among prepared pans. Bake for 22–27 minutes or until a toothpick inserted in the centre comes out clean.
07 - Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
08 - Simmer chopped cherries with sugar and a splash of lemon juice over medium heat until slightly thickened. Allow filling to cool completely.
09 - Beat cream cheese until smooth. Add softened butter and beat until fluffy. Gradually blend in powdered sugar and vanilla. Incorporate cherry juice or purée for desired flavour and colour.
10 - Layer cakes, spreading cherry filling and frosting between each layer. Cover the sides and top with the remaining frosting. Garnish with extra cherries if desired.
