Set oven to 200°C (400°F) and allow it to preheat fully.

Heat olive oil in a skillet over medium heat. Add sliced bell peppers and onions, sautéing for 5–7 minutes until softened.

Push vegetables to the side of the skillet. Season flank steak with salt and pepper, add to the pan, and cook for 3–5 minutes until browned.

Slice the French loaf lengthwise and remove a portion of the soft interior to create space for filling.

Mix sautéed steak, vegetables, minced garlic, and provolone cheese thoroughly. Spoon the mixture evenly into both halves of the prepared loaf.

Place filled bread on a parchment-lined baking sheet. Bake for 15–20 minutes or until the loaf is golden and the cheese is melted.
