Place apples on their sides on a cutting board and slice into 6-millimetre thick rounds using a chef’s knife. Remove seeds with cooking tweezers as necessary.

Position a cooling rack over a baking sheet. Lay apple slices on the rack, ensuring at least 1.5 centimetres space between each slice.

Add white sugar to a saucepan and heat over medium-high, stirring continuously with a rubber spatula until fully melted and golden, approximately 5–7 minutes.

Carefully spoon melted sugar over each apple slice. After coating three slices, sprinkle a pinch of finishing salt and thyme leaves. Continue until all slices are covered.

Allow candied apple slices to cool on the rack for several minutes until the sugar hardens, then serve.
