Heat a skillet over medium heat. Add lean ground beef and season lightly with salt and pepper. Cook, stirring occasionally, until thoroughly browned, about 8 minutes. Drain excess fat.

While the beef cooks, halve the cherry tomatoes, shred the lettuce, and slice the pickles.

Combine ketchup and mustard in a small bowl. Stir well to blend into a smooth sauce.

In individual serving bowls, layer cooked brown rice, ground beef, shredded lettuce, cherry tomatoes, pickles, and cheddar cheese. Drizzle burger sauce over the top.
