Set oven to 180°C. For a non-fan oven, preheat to 200°C.

Evenly drizzle 1 tablespoon honey over each puff pastry sheet.

Evenly scatter walnuts, crumbled blue cheese, and grated Parmesan over each pastry sheet. Add fresh thyme leaves and season with sea salt and cracked black pepper.

Roll up each pastry sheet tightly. Slice each roll lengthways, gently tucking in the filling to prevent spillage.

On baking paper, twist each pastry strip and coil into a round twirl. Brush with milk for glaze.

Bake for 25–30 minutes until puffed and golden brown.

Remove from oven, garnish with extra fresh thyme leaves, and serve warm.
