Set oven to 200°C and allow to come to full temperature.

Lightly coat a 23 centimetre oval or comparable shallow baking dish with cooking spray.

Combine ricotta cheese, goat cheese, egg, all lemon zest, lemon juice, thyme, salt, and several grinds of black pepper in a food processor bowl. Blend for 2 minutes until mixture is completely smooth and creamy.

Transfer cheese mixture to the prepared baking dish. Evenly scatter fresh blackberries across the surface.

Place dish in the centre of the oven and bake for 30 minutes, until cheese base is bubbling and blackberries have softened.

Remove from oven. Generously drizzle with honey, sprinkle with additional thyme leaves and a pinch of coarse salt. Serve immediately with toasted bread or crackers.
