Baked Lemon Ricotta Blackberries Honey (Print-Friendly Format)

Tangy ricotta blended with berries and honey, baked for a creamy starter or summer snack.

# Ingredients You’ll Need:

→ Dairy Base

01 - 227 grams whole milk ricotta cheese
02 - 113 grams fresh goat cheese, softened
03 - 1 large egg

→ Aromatics & Seasoning

04 - 1 tablespoon fresh thyme, chopped, plus extra for garnish
05 - 1 clove garlic, minced
06 - Zest of 1 lemon
07 - 1 teaspoon fresh lemon juice
08 - 0.5 teaspoon coarse salt, plus extra for garnish
09 - Freshly cracked black pepper, to taste

→ Topping

10 - 170 grams fresh blackberries
11 - 2 tablespoons honey

# How to Make It:

01 - Set oven to 200°C and allow to come to full temperature.
02 - Lightly coat a 23 centimetre oval or comparable shallow baking dish with cooking spray.
03 - Combine ricotta cheese, goat cheese, egg, all lemon zest, lemon juice, thyme, salt, and several grinds of black pepper in a food processor bowl. Blend for 2 minutes until mixture is completely smooth and creamy.
04 - Transfer cheese mixture to the prepared baking dish. Evenly scatter fresh blackberries across the surface.
05 - Place dish in the centre of the oven and bake for 30 minutes, until cheese base is bubbling and blackberries have softened.
06 - Remove from oven. Generously drizzle with honey, sprinkle with additional thyme leaves and a pinch of coarse salt. Serve immediately with toasted bread or crackers.

01 - For optimal creaminess, use full-fat ricotta and allow goat cheese to come to room temperature before blending.
