01 - 2 acorn squash, halved and seeded
02 - 2 tablespoons olive oil
03 - 1 cup diced apples
04 - 1/2 cup chopped walnuts
05 - 1/4 cup dried cranberries
06 - 1/2 teaspoon ground cinnamon
07 - 1/4 teaspoon ground nutmeg
08 - 1/4 teaspoon salt
09 - 2 tablespoons maple syrup

# Steps:

01 - Preheat the oven to 190°C.
02 - Brush the cut sides of the acorn squash halves with olive oil.
03 - Arrange the squash halves cut side down on a baking sheet. Roast for 30 minutes until the flesh is tender.
04 - In a medium-sized bowl, combine diced apples, chopped walnuts, dried cranberries, ground cinnamon, ground nutmeg, salt, and maple syrup until evenly mixed.
05 - Remove the roasted squash from the oven and gently turn them cut side up. Divide the apple filling evenly among the squash cavities.
06 - Return the filled squash halves to the oven. Bake for 20 minutes more until the apples are tender and the squash is fully cooked.
