Apple Spiced Stuffed Sweet Potatoes (Print Version)

# Ingredients:

01 - 4 medium sweet potatoes

→ Spiced Apple Mixture

02 - 2 tablespoons unsalted butter
03 - 2 apples, such as Honeycrisp or Granny Smith, peeled and diced
04 - 1 tablespoon pure maple syrup
05 - 0.5 teaspoon ground cinnamon
06 - 0.25 teaspoon ground nutmeg
07 - 0.125 teaspoon ground cloves
08 - 0.25 teaspoon salt

09 - 0.25 cup chopped pecans
10 - 2 tablespoons dried cranberries
11 - plain Greek yogurt or whipped cream, for serving

# Steps:

01 - Preheat oven to 200°C. Prick sweet potatoes several times with a fork and arrange on a baking tray. Roast for 45 to 55 minutes or until fork-tender.
02 - Melt butter in a skillet over medium heat. Add diced apples and sauté until softened, about 5 to 7 minutes. Stir in maple syrup, cinnamon, nutmeg, cloves, and salt. Cook for an additional 2 minutes, then remove from heat.
03 - Slice roasted sweet potatoes open and gently fluff the flesh with a fork. Spoon the warm apple mixture into the center of each and sprinkle with chopped pecans and dried cranberries.
04 - Serve immediately while warm, with Greek yogurt or whipped cream as a topping if desired.

# Notes:

01 - You may substitute walnuts for pecans or omit nuts to accommodate allergies. For a richer finish, drizzle with almond butter just before serving.
