Pat chicken breasts dry and season both sides with salt and black pepper.

Heat olive oil in a large skillet over medium-high heat. Place the chicken breasts in the skillet and cook for 5–6 minutes per side until golden brown and fully cooked. Transfer chicken to a plate and set aside.

In the same skillet, add sliced apples and cook for 2–3 minutes over medium heat until they begin to soften.

Pour in the maple syrup and chicken broth, then sprinkle ground cinnamon into the pan. Stir gently and let the mixture simmer for 2 minutes to combine the flavours.

Return the seared chicken breasts to the skillet, nestling them among the apples. Allow everything to cook for an additional 5–7 minutes on medium-low heat until the sauce thickens slightly and flavours meld.

Just before serving, drizzle fresh lemon juice over the chicken for brightness, if desired. Garnish with thyme sprigs and serve warm on a platter.
